Bok Choy Stir-Fried Beef

There’s something so satisfying about a sizzling wok filled with tender slices of beef and crisp bok choy. This quick stir-fry is perfect for busy weeknights when you want something wholesome and full of flavor without spending all evening in the kitchen. The savory sauce—balanced with soy, oyster sauce, and a hint of sesame—coats every bite beautifully.

Ingredients

  • (10 oz) beef sirloin or flank steak, thinly sliced against the grain

  • 2 tablespoons soy sauce

  • 1 tablespoon oyster sauce

  • 1 tablespoon dark soy sauce

  • 1 teaspoon sesame oil

  • 1 teaspoon sugar

  • 1 tablespoon cornstarch (optional, for tenderizing the beef)

  • 2 tablespoons vegetable oil, divided

  • 3–4 cups baby bok choy, washed and halved lengthwise

  • 2 cloves garlic, minced

  • 1 small onion, sliced (optional)

  • Cooked jasmine rice, for serving


Instructions

  1. Marinate the beef:

    In a bowl, combine the beef slices with soy sauce, oyster sauce, dark soy sauce, sesame oil, sugar, and cornstarch (if using). Toss well and let it marinate for at least 15 minutes.

  2. Cook the beef:

    Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat. Add the marinated beef and stir-fry for 2–3 minutes until just browned. Remove from the pan and set aside.

  3. Stir-fry the veggies:

    In the same pan, add the remaining oil. Sauté garlic (and onion, if using) until fragrant, about 30 seconds. Add the bok choy and stir-fry for 2–3 minutes, just until tender but still crisp.

  4. Combine and serve:

    Return the beef to the pan, toss everything together, and stir-fry for another minute to coat with sauce. Taste and adjust seasoning if needed.

  5. Enjoy!

    Serve hot over steamed jasmine rice or noodles for a cozy, comforting meal.
