Greek Chicken with Lemon Rice, Chickpeas, Spinach, and Grape Tomatoes

This Greek chicken and lemon rice recipe combines juicy, marinated chicken with zesty rice, nutrient-rich spinach, creamy chickpeas, and sweet grape tomatoes for a meal that’s as satisfying as it is nourishing.


Ingredients:

For the Chicken:

  • 4 boneless, skinless chicken breasts

  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 lemon (zested and juiced)

  • 1 tsp dried oregano

  • 1 tsp paprika

  • Salt and pepper to taste


For the Lemon Rice:

  • 1 cup basmati or jasmine rice

  • 2 cups chicken broth

  • 1 lemon (zested and juiced)

  • 1 tbsp olive oil

  • 1/2 tsp turmeric (optional, for color)

  • Salt to taste


For the Veggie Mix:

  • 1 cup canned chickpeas, rinsed and drained

  • 2 cups fresh spinach

  • 1 cup grape tomatoes, halved

  • 1 tbsp olive oil

  • 1/4 tsp red pepper flakes (optional)

  • Salt and pepper to taste

Instructions:


Marinate the Chicken: In a bowl, whisk together olive oil, garlic, lemon juice, zest, oregano, paprika, salt, and pepper. Add the chicken breasts and marinate for at least 30 minutes (or overnight for deeper flavor).

Cook the Chicken: Heat a skillet over medium heat, add a drizzle of olive oil, and cook the chicken for 5-7 minutes per side until golden brown and fully cooked. Remove from the pan and let rest.

Make the Lemon Rice: In a medium saucepan, heat olive oil over medium heat. Add rice and stir until lightly toasted. Pour in chicken broth, lemon juice, zest, turmeric, and salt. Bring to a boil, then reduce to a simmer, cover, and cook until the liquid is absorbed (about 15 minutes).

Prepare the Veggies: In the same skillet used for the chicken, add olive oil and sauté chickpeas, spinach, and grape tomatoes. Season with red pepper flakes, salt, and pepper. Cook until the spinach wilts and the tomatoes soften slightly.

Assemble and Serve: Fluff the rice with a fork and spread it on a serving platter. Top with sautéed veggies and sliced chicken. Garnish with fresh parsley or crumbled feta, if desired.
