Roasted Beet + Butternut Squash Salad with Burrata

3 medium beets, peeled and cubed

⅓ cup toasted pecans, roughly chopped

Instructions
1. Roast the Vegetables
Preheat oven to 400°F.
Place the cubed beets on one side of a large baking sheet and the butternut squash on the other. Drizzle with olive oil and season with salt and pepper. Toss separately to coat evenly.
Roast for 30–35 minutes, flipping halfway through, until tender and lightly caramelized.

Allow the roasted vegetables to cool slightly. Arrange the beets and squash on a large serving platter or bowl.
