These Healthy Loaded Sweet Potato Skins are crispy on the outside, soft in the middle, and packed with protein-rich toppings and fresh flavor. They make the perfect game day snack, easy dinner, or healthy appetizer that feels indulgent without being heavy.

Ingredients

Sweet Potatoes

2 medium sweet potatoes

1 tablespoon olive oil

½ teaspoon garlic powder

½ teaspoon smoked paprika

Salt and pepper to taste

Filling

½ cup plain Greek yogurt

½ cup black beans, drained and rinsed

¼ cup shredded sharp cheddar cheese

¼ cup diced green onion

¼ cup diced tomatoes

1 small avocado, diced

Fresh cilantro for garnish

Optional Toppings

Turkey bacon crumbles

Jalapeño slices

Hot sauce

Lime wedges

Instructions

1. Bake the Sweet Potatoes


Preheat oven to 400°F.

Wash and dry the sweet potatoes. Pierce several times with a fork and bake for 35–40 minutes, or until fork tender.

Allow to cool slightly.


2. Scoop and Crisp


Cut sweet potatoes in half lengthwise.

Carefully scoop out a small portion of the center, leaving about ¼ inch around the edges.

Brush both sides lightly with olive oil and season with:

garlic powder

smoked paprika

salt

pepper

Place skin-side down on a baking sheet and bake another 8–10 minutes until slightly crispy.


3. Add the Toppings

Fill each potato skin with:

black beans

shredded cheese


Return to oven for 3–5 minutes until cheese melts.


Top with:

Greek yogurt

tomatoes

avocado

green onion

cilantro

Serve warm
