This Healthy Chickpea & Cucumber Salad with Creamy Dill Dressing is fresh, protein-packed, and full of Mediterranean flavor. Crisp cucumbers, hearty chickpeas, fresh herbs, and a light Greek yogurt dill dressing come together in a quick and easy salad perfect for meal prep, summer lunches, or healthy side dishes.

Ingredients:
For the Salad
2 cans (15 oz each) chickpeas, drained and rinsed
1 large English cucumber, diced
1 cup cherry tomatoes, halved
¼ small red onion, thinly sliced
⅓ cup crumbled feta cheese (optional)
2 tablespoons fresh parsley, chopped
2 tablespoons fresh dill, chopped
For the Creamy Dill Dressing
¾ cup plain Greek yogurt
1 tablespoon olive oil
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1 garlic clove, minced
2 tablespoons fresh dill, finely chopped
½ teaspoon sea salt
¼ teaspoon black pepper
1–2 tablespoons water (to thin if needed)
Instructions:
Prep the vegetables
Dice the cucumber, halve the tomatoes, and thinly slice the red onion.
Make the dressing
In a medium bowl, whisk together the Greek yogurt, olive oil, lemon juice, Dijon mustard, garlic, dill, salt, and pepper until smooth.
Assemble the salad
In a large bowl, combine chickpeas, cucumber, tomatoes, red onion, parsley, and dill.
Dress and toss
Pour the creamy dill dressing over the salad and gently toss until evenly coated.
Finish and serve
Top with feta if using. Chill for 15–20 minutes before serving for best flavor.
