Roasted Broccoli with Parmesan

Sometimes we like to dress up our vegetables with a little something extra. This mouthwatering broccoli side dish will leave you wanting more, good thing it serves 6! Ingredients:
4 to 5 pounds broccoli
4 garlic cloves, peeled and thinly sliced
olive oil (around 5 ounces) - we like the Spanish variety
1.5 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
2 teaspoons grated lemon zest
2 tablespoons freshly squeezed lemon juice
3 tablespoons pine nuts, toasted
1/3 cup freshly grated Parmesan cheese
2 tablespoons julienned fresh basil leaves (about 12 leaves)
Directions:
1. Preheat the oven to 425 2. Cut broccoli from the stalks and place them on a large sheet pan making sure they are just in a single layer. 3. Drizzle around 5 ounces of olive oil over the broccoli florets and sprinkle the garlic and salt & pepper over them. 4. Roast for 20-25 minutes to taste (either tender or until some are browned) 5. Remove from the oven and immediately toss with 1.5 tablespoons of olive oil, lemon zest, lemon juice, pine nuts, Parmesan, and basil. Best served hot. Credit: Food Network
