We love this 10 minute microwave blueberry muffin as a quick breakfast or even snack option. It's less than 300 calories and packs a mean punch with 16g of protein as well as fiber and potassium to fuel your day! Ingredients: 1/2 cup frozen blueberries 1/4 cup applesauce 1/3 cup dairy-free milk (almond or coconut) 1/2 tsp vanilla extract 5 Tbsp gluten-free flour (almond or coconut) 1 tsp baking powder 1/2 scoop protein powder, unflavored 1/8 tsp sea salt 1/8 tsp cinnamon Instructions: -In a bowl add the blueberries, applesauce, milk and vanilla, stir to combine. -In another bowl add the dry ingredients, stir to combine. -Fold the dry ingredients to the wet using a rubber spatula. -Spray a 4-inch ramekin or 2 coffee mugs with non-stick cooking spray. Add the batter. -Microwave for about 4 minutes, until cooked through. -If you do not have a large enough ramekin, divide the batter between two coffee mugs to microwave. Credit: Habit
