Cabbage is a powerhouse vegetable that offers numerous benefits for gut health, largely due to its high fiber content and natural compounds. Rich in prebiotics, cabbage helps nourish the beneficial bacteria in the gut microbiome, promoting a healthy digestive system. The fiber in cabbage also aids in regular bowel movements and supports overall gut motility. Additionally, cabbage contains antioxidants like vitamin C and sulforaphane, which can reduce inflammation and protect gut cells. Including cabbage in your diet can be an easy, delicious way to support a balanced microbiome and improve digestion. We love to add some protein to it and make a hearty delicious meal. It’s great for meal prep as well!
Ground Bison and Cabbage Bowl Recipe
Ingredients:
1 lb ground bison
1 medium onion, diced
2 cloves garlic, minced
1 teaspoon cumin
1/2 teaspoon cayenne pepper (adjust to taste)
1 teaspoon smoked paprika
Salt to taste
15 oz can diced tomatoes (with juices)
3 cups cabbage, shredded (about half a medium head of cabbage)
1 tablespoon olive oil or cooking oil of choice
Optional toppings: fresh cilantro, lime wedges, or a dollop of sour cream or Greek yogurt
Instructions:
Prepare the vegetables:
Dice the onion and mince the garlic.
Shred the cabbage and set it aside.
Cook the bison:
In a large skillet or pan, heat the olive oil over medium-high heat.
Add the ground bison to the pan, breaking it apart with a spoon or spatula. Cook until browned, about 6-8 minutes.
Season the bison with cumin, cayenne pepper, smoked paprika, and salt to taste. Stir well to combine the spices with the meat.
Add the onions and garlic:
Once the bison is browned, add the diced onion and minced garlic to the pan.
Cook for an additional 3-4 minutes, until the onions are soft and fragrant.
Incorporate the tomatoes and cabbage:
Pour the can of diced tomatoes (with juices) into the pan and stir.
Add the shredded cabbage and stir again to combine. The cabbage will begin to wilt down.
Simmer:
Reduce the heat to medium-low and cover the pan. Let the mixture simmer for 10-12 minutes, stirring occasionally, until the cabbage is tender and everything is heated through.
Taste and adjust:
Taste the dish and adjust the seasoning with more salt, cayenne, or smoked paprika as desired.
Serve:
Spoon the bison and cabbage mixture into bowls and serve hot.
Optionally, garnish with fresh cilantro, a squeeze of lime juice, or a dollop of sour cream or Greek yogurt.
