Creamy Avocado Pesto This gluten free, paleo, Whole 30 compliant meal is so easy and the flavor is AMAZING. We love putting this creamy avocado pesto over zucchini noodles (which we lazily buy from Whole Foods). You could easily use this with a gluten free noodle or even as a spread with some turkey. Did we mention it is so YUMMY! Prep Time: 10 min, Cook Time: quick Ingredients
1 large avocado
1/2 cup fresh basil
3 tablespoons lemon juice
3 tablespoons pine nuts
3 cloves garlic
2 tablespoons olive oil
1/2 teaspoon sea salt
fresh cracked pepper (to taste)
Instructions
Combine the ingredients in a food processor and blend until completely smooth. Arrange the avocado halves on a cookie sheet, and line the hollows with strips of smoked salmon. Crack each of the eggs into a small bowl, then spoon the yolks and however much white the avocado will hold.
Gently stir the creamy sauce into noodles and serve.
