These No-Bake Strawberry Cheesecake Cups are light, creamy, and bursting with fresh strawberry flavor. Perfect for May celebrations, warm-weather entertaining, or an easy make-ahead dessert—no oven required.


Ingredients


Crust Layer

* 1 cup graham cracker crumbs

* 2 tablespoons sugar

* 4 tablespoons butter, melted


Cheesecake Layer

* 8 oz cream cheese, softened or Greek yogurt

* ½ cup heavy whipping cream

* ⅓ cup powdered sugar

* 1 teaspoon vanilla extract


Strawberry Layer

* 2 cups fresh strawberries, diced

* 1 tablespoon sugar

* 1 teaspoon lemon juice


Instructions


1. Prepare the crust:

In a small bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Divide evenly among serving cups and gently press down.


2. Make the cheesecake filling:

Beat cream cheese until smooth. Add powdered sugar and vanilla, mix until creamy.

In a separate bowl, whip heavy cream to stiff peaks, then gently fold into the cream cheese mixture.


3. Prepare strawberries:

Toss diced strawberries with sugar and lemon juice. Let sit 10 minutes to release juices.


4. Assemble the cups:

Spoon cheesecake filling over the crust, then top with strawberries and juices.


5. Chill:

Refrigerate for at least 1 hour before serving for best texture.
