For the Salad:
3 medium beets, roasted, peeled, and sliced
4 cups fresh baby spinach
2 mandarins, peeled and segmented
1 navel orange, peeled and segmented
½ small red onion, thinly sliced
½ cup crumbled feta cheese
¼ cup toasted walnuts or pecans (optional, for crunch)
For the Honey Mustard Vinaigrette:
3 tbsp olive oil
1 tbsp Dijon mustard
1 tbsp whole-grain mustard
2 tbsp honey
2 tbsp apple cider vinegar (or white wine vinegar)
Salt and freshly ground black pepper, to taste
1. Roast the Beets
Preheat your oven to 400°F (200°C).
Wrap each beet in foil and place them on a baking sheet. Roast for 45–60 minutes, until fork-tender.
Let them cool slightly, then peel and slice into wedges or rounds.
2. Make the Vinaigrette
In a small bowl or jar, whisk together the olive oil, Dijon, whole-grain mustard, honey, and vinegar.
Season with salt and pepper to taste. Shake or whisk until well combined.
3. Assemble the Salad
* On a large platter or in a salad bowl, arrange the spinach as a base.
* Top with roasted beets, mandarin and orange segments, and sliced red onion.
* Sprinkle over the crumbled feta and nuts (if using).
4. Dress & Serve
Drizzle the honey mustard vinaigrette over the salad just before serving.
Toss gently or serve with dressing on the side.
