Roasted Salmon with Vegetable Herb Quinoa

If you like salmon you will love this roasted salmon with veggie herb quinoa! It is 4 portions and only takes 25 minutes from start to finish! We typically get all of our ingredients from Whole Foods or Sprouts as they will have the best options if you want to go all organic.

INGREDIENTS

  • 1 cup quinoa

  • 4- 4 oz salmon fillets (wild NOT "farm fresh")

  • 1 Tbsp olive oil (extra virgin or you could sub coconut oil)

  • 1 1/2 tsp sea salt, divided

  • 1/2 red bell pepper, diced

  • 1/2 yellow bell pepper, diced

  • 1 zucchini, diced

  • 3 Tbsp cilantro, chopped (or not...)

  • 2 Tbsp basil, chopped

  • 1 lime, zested & juiced

COOKING INSTRUCTIONS

  1. Cook quinoa per package instructions. Set aside.

  2. Heat a large skillet over medium heat. Heat 2 tsp of the oil. Carefully lay the salmon flat side down. Season the fillets with 1/2 a tsp of salt and a pinch of black pepper.

  3. Cook the salmon for about 3 minutes on each side, depending on desired doneness.

  4. Meanwhile heat a clean skillet over medium heat. Lightly grease the skillet, we use ghee or coconut oil. Add the bell peppers and zucchini, sauté for 2 minutes until a golden brown color.

  5. Add the quinoa, 1 tsp of oil, vegetables, herbs, lime juice, zest, 1 tsp salt and a pinch of black pepper to a bowl. Gently toss to combine.

  6. Divide the quinoa among 4 plates, top each with a salmon fillet.
