Two Ingredient Sweet Potato Waffles

Ever wonder how you can make a somewhat unhealthy breakfast item into a healthy choice? We love waffles, and pancakes, but sometimes it's not the best thing to break a fast with. To combat this we have found a quick, two ingredient recipe, to change up your waffle game. Even the picky eaters agree that these waffles are tasty, and they only take about 5 minutes to make! Ingredients: 1 Large Sweet Potato (cooked and skin removed) 2 Large Eggs 1 Teaspoon Vanilla (optional) 1 Teaspoon Cinnamon (optional) Directions:
Rinse and pierce the sweet potato with a fork
Microwave on high for about 3 minutes or until tender
Let cool and remove skin
In a large bowl mash all the ingredients until smooth
Heat the waffle iron (to 425 degrees) and coat with coconut oil
Cook for 5 minutes or until browned
Tip: You can meal prep these and keep them in the fridge for about three days or even freeze them for up to one month! If you wanted to make pancakes follow the same directions but make 2-inch circles in a skillet or griddle and cook for 2-3 minutes per side. Credit: Sinful Nutrition
